Healthy Easter Snacks

We know this isolation period is maybe making everyone feel a bit stir crazy, but cooking (or baking) can offer some calmness in your day and the feeling of providing our families and ourselves with healthy food options is very rewarding.

Below are 2 recipes that are simple, easy and fun to make… and EAT!

 

No Bake Easter Egg Fruit Tarts 

Ingredients:

1 Cup Nut Butter ( I used Fatso peanut butter )

2 Cups Oats

¼ Cup Honey

2 Tsp Vanilla

¼ Tsp Salt

¾ Cup Greek Yogurt

1 Cup Fruit (I used strawberries, blueberries, kiwi and bananas) 

 

Instructions: 

1. In a microwave safe bowl, add nut butter, honey, vanilla and salt. Microwave for 20 seconds, then stir until smooth. 

2. Take 1 cup oats and place in a blender. Blend until the oats are finely chopped and resembles flour. Set aside.

3. Add the other cup of oats to the nut butter mixture and stir. Slowly add in a little of your homemade oat flour at a time until you get a mixture that can form into a crust. 

Depending on your brand of nut butter the amount of flour may vary. 

4. Take small amounts of the mixture and form Easter egg shaped disks. Place onto parchment paper or foil for easy cleanup. Put in the refrigerator for 30 minutes to set. 

5. Top eggs with Greek yogurt and fruit variety and make your own designs. Enjoy!

 

Apple Donuts 

Ingredients:

1 Large Apple  (I used Honey crisp, but you can used whatever kind)

1 80z package of Cream Cheese (You can use greek yogurt as an alternative)

2 Tsp Vanilla

¼ cup sugar  (I used cane sugar) 

Sprinkles … the more the better 

Food coloring 

 

Instructions:

1. Wash and peel the apple and cut into round slices, approximately ½ inch thick.

2. Cut out circles in the middle of each slice to resemble a donut.

3. Allow your cream cheese to soften at room temperature. Place in a bowl and add vanilla and sugar and mix until smooth.

4. Separate cream cheese into 3 bowls and add food colouring of choice.

5. Spread cream cheese mixture on top of apple slices and garnish with sprinkles.
